This Turkish-German spice blend is the perfect seasoning for authentic German-style doner meat that lends it the authentic doner flavour that you can enjoy in Germany. Pul biber is another name for the Aleppo pepper, which is a moderately spicy variety of Capsicum annuum used as a spice, particularly in Turkish, Middle Eastern and Mediterranean cuisine. Also known as the Halaby pepper, its fruit are ripened to a burgundy colour, then semi-dried, de-seeded, and crushed or coarsely ground.

Ingredients:

1 tbsp salt
1 tbsp sugar
4 tbsp paprika powder
1 tbsp coarsely-ground black pepper
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp ground coriander
½ tbsp ground cumin
1 tsp dried thyme
1 tbsp dried oregano
1 tbsp Pul Biber (or 1 tsp chilli powder)
1 tsp smoked paprika
1 tbsp dried marjoram (optional)
½ tbsp dried summer savory (optional)
1 tbsp cayenne pepper (optional)

Method:

Add all spices to a bowl then crumble in the dried herbs, if using. Mix thoroughly to combine then spoon into a jar.

Secure a tight-fitting lid and sore in a cool, dark cupboard (it should keep for up to 3 months).
