Dilly Courgette Ricotta Muffins

Ingredients:

210g (1 1/2 cups) unbleached plain flour
3 tsp baking powder
3/4 tsp fresh dill, finely chopped
100g butter, melted and cooled
160ml Ricotta cheese
2 tbsp sugar
1/2 tsp salt
60ml milk
2 large eggs
60g (1/2 cup) grated courgette (zucchini)

Method:

Combine the flour, sugar, baking powder, salt and dill in a bowl. Stir well to combine.

In a separate bowl, combine the milk, melted butter and eggs. Beat to combine then stir in the ricotta cheese and courgettes. Beat well then add the wet mix all at once to the dry ingredients. Stir until just moistened then spoon the batter between 12 lined or greased muffin cups, filling them no more than 2/3 full.

Transfer to an oven pre-heated to 200C (400F, Gas Mark 6) and bake for between 20 and 25 minutes, or until golden brown and cooked through.

Remove from the tin and serve immediately.
