Dem Bones is a modern American recipe for a dish of corn tortillas filled with a mix of cheese and vegetables that's coated in a groundnut oil sauce and which is served like a skeleton for Halloween. The full recipe is presented here and I hope you enjoy this classic American version of: Dem Bones.
For the Sauce:
160ml groundnut oil
2 tbsp chilli powder
2 tbsp sweet paprika
1 tsp ground cumin
1/2 tsp ground white pepper
1/2 tsp cayenne pepper
For the Filling:
300g onions, diced
900g Cheddar cheese, grated
450g roasted bell peppers, chopped
30g pickled jalapeño chillies, chopped
180g pitted black olives, chopped
1 Jack-o-lantern (for the head)
Method:
Combine the sauce ingredients in a shallow bowl and whisk together. In a separate bowl combine all the stuffing ingredients. Either gently bake or microwave the tortillas until they are warmed through and flexible.
Dredge a tortilla through the sauce then place sauce side uppermost and fill with about 4 tbsp of the stuffing. Roll the tortilla up then arrange the tortillas on a baking tray lined with parchment or greaseproof paper. Set then crossways, two abreast to form sets of 'ribs'.
When done, spread any left-over sauce on top of the 'bones' . When ready to serve, place in an oven pre-heated to 170°C and bake for 15 minutes. Add a lighted Jack-o-lantern at the top of the plate to form a head and serve as a snack.
