Curtido is a lightly pickled cabbage slaw common in most countries of Central America (though this specific version is from El Salvador. Adding half a jalapeño chilli gives the final dish a bit of an extra pep.

Ingredients:

1/2 head of green cabbage, thinly shredded
1 carrot, peeled and grated
1/2 onion, peeled and thinly sliced
1/2 jalapeño chilli, thinly sliced
250ml vinegar
375ml water
1 tsp Mexican oregano
freshly-cracked black pepper, to taste
2 tsp raw sea salt (you don’t want iodated salt)

Method:

Combine the vinegar, water, oregano, salt and cracked black pepper in a bowl.

Add the vegetables to another bowl then pour over the vinegar mixture and stir to combine. Crush the cabbage slightly (this will make it easier to pack into jars).

Fill two 600ml Mason (or pickling) jars with the vegetables then top with the vinegared brine. Seal with vinegar proof lids then allow to pickle over night in the refrigerator.
