Here is an interesting French recipe for pancake day. A classic breakfast pancake containing currants.
Ingredients:
1 medium egg
2 tbsp caster sugar
4 tbsp plain flour
1 tbsp currants
150ml milk
45g butter
tray of 4 Yorkshire pudding pans, well buttered
For the Lemon Butter:
2 tbsp butter, softened
1 tbsp sugar
finely-grated zest of 1 large lemon
Method:
For the lemon butter, mix together the butter, sugar and lemon zest in a bowl. Shape into a round, cover with clingfilm (plastic wrap) and chill in the refrigerator until needed.
Whisk together the egg and sugar in a bowl. Sift over the flour and stir to combine then add the currants.
Combine the milk and butter in a pan and heat gently until the butter melts. Gradually str in the dry ingredients and mix well to combine. Set aside to rest for 30 minutes.
Divide half the batter between the prepared Yorkshire pudding tins. Transfer to an oven pre-heated to 200°C and bake for between 15 and 20 minutes, or until well risen and golden brown.
Serve immediately with lemon butter and lemon wedges.
