Courgette and Cheese Parcels: Classic British recipe for a vegetarian barbecue dish of courgettes and feta cheese cooked with mint in foil parcels.

Ingredients:

1 small bunch of fresh mint
8 courgettes (zucchini)
1 tbsp oil
115g feta cheese, cut into strips
freshly-ground black pepper, to taste


Method:

Using a sharp knife, finely chop 1 tbsp of the mint.

Cut out 8 rectangles of foil, each one large enough to completely enclose a courgette and brush with olive oil.

Cut a slit along the side of each courgette, then transfer each courgette to its own foil rectangle.

Insert strips of feta cheese along the length of each of the slits in the courgettes. Drizzle over a little olive oil and sprinkle with the finely-chopped mint. Season to taste with black pepper, then fold in the sides of the foil an seal the edges securely, so that the cheese-stuffed courgettes are completely enclosed in the parcel.

Place the courgette parcels directly in the charcoal embers of a barbecue and cook for about 30 minutes.

When tender, carefully unwrap the parcels and serve immediately.
