Clafoutis is a traditional French recipe for a classic dessert pie of cherries baked in a flour and egg batter with milk. The full recipe is presented here and I hope you enjoy this classic French version of: Clafoutis.

Ingredients:
600g unpitted black cherries
4 eggs
4 tbsp flour
4 tbsp sugar
500ml milk
pinch of salt
Method:
Mix the flour, sugar and salt in a bowl and form a well. In a separate bowl beat together the eggs then stir-in the milk. Pour the milk mixture into the flour and sugar mix, stirring all the while.
Butter an oven dish (eg a flan dish) then pour in the batter and place the cherries on top. Bake in a hot oven (about 200°C (400°F/Gas Mark 6)) for between 50 and 60 minutes. Take out, sprinkle with sugar and allow to cool before serving.
