This is a classic Mexican seasoning that's most well known for seasoning corn in dishes such as esquites (street corn) but it also works sprinkled on fruit, used on the rim of drinks glasses and also as a flavouring ingredient in savoury dishes.

Ingredients:

4 tbsp chilli powder (like chile guajillo, chile ancho, chile de arbol, or chile california) [or use a combination of your favourite dried chillies]
1 tsp sea salt
1 tsp citric acid
1 teaspoon sugar (optional)

Method:

If using whole dried chillies, remove seeds and add to a blender. Process until you have a powder.

Transfer to a small bowl and add the salt and citric acid. Mix well to com-bine.

Add sugar: this is optional if you want to give it a hint of Mexican candy or if your chilli seasoning comes out too spicy for your taste.

Spoon into a jar, seal with an air-tight lid and store in a cool, dry, place where it will keep for many months.
