Chia Fresca

Chia Fresca is a traditional Mexican recipe for a classic drink of sweetened lime juice and water thickened with chia seeds served over ice in tall glasses. The full recipe is presented here and I hope you enjoy this classic Mexican version of: Chia Fresca.

This is one of the classic Mexican ways of using chia seeds by mixing with fruit juice to form a drink

Ingredients:

120ml fresh lime juice
200g granulated sugar
2.5l water
1 tbsp whole chia seeds
sprigs of fresh mint, to garnish
ice cubes, to serve

Method:

In a large pitcher, combine the lime juice, sugar and water. Stir with a long-handled spoon until all the sugar has dissolved. Now add the chia seeds. Stir vigourously to prevent the seeds for clumping then set aside for a few minutes before stirring vigourously again.

Set aside in the refrigerator to cool until needed. Be sure to stir vigourously once again to distribute the seeds before dividing between tall glasses half-filled with ice. Garnish with a sprig of mint and serve.

This is the traditional way of making Chia Fresca, but it can seem quite sweet to some tastes. I have also made a version by substituting 1l of orange juice for 1l water and cutting the sugar in half.
