Cheesy Bonfire Bread

Cheesy Bonfire Bread is a traditional British recipe for a classic wholemeal soda bread leavened with bicarbonate of soda incorporating Cheddar cheese, roasted bell peppers and pumpkin seeds that makes an excellent accompaniment to Bonfire Night meals. Ingredients:

200g wholemeal flour
200g plain flour
1 tsp bicarbonate of soda
2 tsp cream of tartar
1 tsp salt
1 tsp caster sugar
30g butter, melted and cooled
300ml milk (at room temperature)
180g Cheddar cheese, coarsely grated
3 tbsp pumpkin seeds
90g roasted peppers (use the ones from a jar), chopped

Method:

Sift together the wholemeal flour, plain flour, bicarbonate of soda, cream of tartar, salt and caster sugar into a bowl. Form a well in the centre then add the melted butter and milk. Combine to form a soft dough.

Turn the dough out onto a lightly-floured work surface then add most of the cheese, 2 tbsp of the pumpkin seeds and the chopped bell peppers and knead to combine. Divide the resultant dough into eight equal portions an divide these into rounds about 3cm thick.

Place the buns side by side on a floured baking tray then scatter the remaining cheese and seeds over the top. Transfer to an oven pre-heated to 180°C and bake for about 25 minutes, or until the cheese is bubbling and the buns are golden brown on top. Transfer to a wire rack to cool and eat warm.
