Cheddar and Onion Beer Bread is a modern American recipe for a classic cake leavened with baking powder and flavoured with beer, cheddar cheese and red onion that's baked in a loaf tin. Ingredients:
420g plain flour
1 tbsp baking powder
1 tsp salt
360ml beer (your choice, but the flavour of the beer will be the basis for the flavour of the final loaf)
40g brown sugar
150g grated cheddar cheese
150g red onion, finely chopped
Method:
Combine the flour, baking powder, salt and sugar in a bowl. Pour in the beer and stir just enough to moisten the flour mix then fold in the cheese and onion. Immediately turn the batter into a greased loaf tin then transfer to an oven pre-heated to 175°C and bake for 60 minutes, or until cooked through and golden brown on top.
Remove from the oven and allow to cool in the tin for 5 minutes before turning out onto a wire rack to cool completely. When ready, slice and serve with jam.
