Ingredients:
90g long-grain rice
1 tsp sea salt
250ml water
4 under-ripe bananas, peeled
15g butter
15g plain flour
juice of 1/2 a lemon
half an apple, peeled, cored and chopped
1/2 onion, chopped
1 dessert spoon curry powder
2 hard-boiled eggs, peeled
2 small, firm, tomatoes, quartered
Method:
Wash the rice thoroughly in a large bowl then drain. Combine in a pan with the water and salt, bring to a boil and cook for 15 minutes, or until tender. Take off the heat, cover with a cloth and allow to steam for 5 minutes.
In the meantime, melt the butter in a pan, scatter over the flour and curry powder then stir to form a smooth roux. Now stir in the lemon juice and a pinch of salt. Fry for a few minutes then whisk in 250ml water, until smooth. Add the apple pieces then bring the mixture to a boil and cook until thickened. Lay the peeled bananas in this sauce and cook gently for about five minutes, or until tender (add more water, as needed).
Strain the rice and heap in the centre of a warmed serving dish. Arrange the cooked bananas around the outside of the rice and pour over the curry sauce. Garnish with the quartered hard-boiled eggs and tomatoes then serve.
