Casamiento (Salvadorean Beans and Rice)

Casamiento (Salvadorean Beans and Rice) is a traditional Salvadorean (from El Salvador) recipe for a classic dish of beans and rice that are cooked separately in a pressure cooker before being finished in a tomato-based sauce. This is the Salvadorean version of the 'rice and beans' dish that is found throughout the Caribbean. The word casamiento means 'marriage' in Spanish and represents the marriage of the beans and rice in the dish.

Ingredients:

For the Beans:
500g Red Beans
1 Dried New Mexico Chilli
2 garlic cloves, peeled and chopped
1 Onion, peeled and chopped
3l Water

For the Rice
400g White Long Grain Rice
1 Carrot
500ml Water

Method:

Begin by preparing the beans. Combine the beans, chilli and water in a pressure cooker along with the onion and garlic. Secure the lid, bring to high pressure and cook for 1 hour.

Use the slow release method to release the pressure, open the lid, then remove and discard the chilli. Finally, transfer the beans and cooking liquid into a bowl, then clean the pressure cooker to cook your rice.

Add the rice and water to the pressure cooker. Peel and grate the carrot then add to the pressure cooker and stir. Place the lid onto the cooker and bring to high pressure for 3 minutes. Allow the pressure to release slowly. Once the pressure has released, remove the lid and fluff the rice.

To assemble the Casamiento: Set a large frying pan or wok over medium heat. Once hot add 2–3 tbsp oil and use to stir-fry the onion for 4–5 minutes until soft and starting to brown. Whilst the onion is cooking, separate the beans from their cooking liquid, reserving the liquid for later.

Using a potato masher, smash the beans into a semi-smooth paste. Add the beans to the pan with the onions and stir to combine. Next add in the chopped tomato, chicken stock powder, and the garlic powder, stirring to combine. Next, stir in the rice. Add as much of the cooking liquid from the beans to thin out the rice and beans mixture to your desired consistency.

Taste the casamiento and add salt and/or additional chicken stock base as needed.

Serve as is or with any of the optional suggestions listed above. Traditionally, casamiento is served with at least corn tortillas but a full meal could include scrambled eggs, crema, and even fried plantains.

Left-over Casamiento will last in the refrigerator for up to 5 days but it can also be frozen for up to 6 months.
