Caramel Roasted Pears a Classic Australian recipe for a dessert of halved pears baked in wine and sugar with butter that are served with a caramel made from the roasting juices.
Halve and core the pears (leave the stems attached to one half). Arrange the pears in a medium-sized oven-proof baking dish then dot the butter over the top.
Drizzle over the wine and sprinkle over the sugar. Transfer to an oven pre-heated to 180°C and bake, turning occasionally, for between 30 and 50 minutes, until the pears are nicely browned and tender all the way through (exact cooking times will depend on the firmness of the pears).
When tender, remove the pears from the oven. Turn the pan juices into a saucepan and cook over medium heat, covered, until sauce caramelizes and thickens slightly.
Arrange the pears on a warmed serving dish. Pour over the caramel sauce and serve.
