Place the buttermilk baking mix in a bowl. Form a well in the centre than pour in the milk. Mix the milk into the other ingredients until everything comes together as a dough. If it's a little dry add 1 tbsp milk.
Transfer the dough to a floured work surface and roll or press into a rectangle about 12mm thick. Use a pastry cutter to cut out biscuits, pressing straight down and not twisting then pulling straight up.
Transfer to an ungreased baking tray, setting the biscuits about 6mm apart (this way they will support each other as they raise).
For drop biscuits, mix dough as directed and, using a medium scoop or ¼ cup measuring cup, portion out biscuits onto a lined sheet pan.
Brush the tops of the biscuits with melted butter then transfer to the centre of an oven pre-heated to 210C and bake for 12 to 15 minutes, or until golden brown on top.
Remove from the oven, brush with more melted butter and enjoy.
