Buffalo Chicken Wing Sauce

Ingredients:

50g dried cayenne peppers
120ml water
45g onion, chopped
1 garlic clove, chopped
80g chopped tomatoes (blanch, peel and de-seed before weighing)
240ml white wine vinegar
115g butter
180ml (1 bottle) Louisiana hot sauce
juice of 1/2 lemon
1 tsp honey
60ml tomato ketchup

Method:

Roast the cayenne peppers for about 2 minutes in a non-stick pan over a medium-high heat (ensure you toss them frequently so they colour evenly and do not burn). Add enough water to cover the chillies then bring the mixture to a boil. Allow to cook for 10 minutes then drain away the water and transfer the chillies to a blender. Blend on high power until smooth.

Place the butter in a pan over medium-high heat and continue cooking until it melts then add the onion, garlic, tomato and Louisiana hot sauce. Bring to a simmer and cook for 5 minutes, stirring occasionally. Immediately pour into a blender then add the cayenne peppers. Blend on high for a few two minutes then add the lemon juice, honey and ketchup. Blend again for a few seconds to mix then pour back into the pan (where the butter was melted), bring to a simmer and cook for 20 minutes.

Take off the heat, pour into bottles then seal and allow to cool before storing in the refrigerator.
