This is basically an English breakfast served on a pizza base and accompanied by a fried egg. Everything you need to set you up for the day served as a pizza.
Ingredients:
1 bread dough pizza base
12 skinless cocktail sausages
3 tbsp oil
1 batch Tomato Sauce for Pizza
150g tin of baked beans
4 rashers of back bacon
60g button mushrooms, wiped clean and quartered
1 small tomatoes cut into 8 wedges
60g mature Cheddar, grated
4 eggs
salt and black pepper
Method:
Roll our or pull the dough on a floured surface until it forms a circle of about 25cm in diameter. Transfer to a large, well oiled, baking tray and using your thumb and forefinger form a lip all the way around the pizza. Cover with a clean tea towel and set aside in a warm place to rise for about 15 minutes.
Meanwhile, brown the sausages in a frying pan using 1 tbsp of the oil. Mix the baked beans into the tomato sauce and use this to cover the base of the pizza. Arrange the sausages on top then cut the bacon into strips and arrange on top of the pizza along with the mushrooms and tomato. Sprinkle the cheese over the top and season.
Place the pizza in an oven pre-heated to 200°C and bake for about 20 minutes, or until the edges of the base are crisp and golden brown.
Add the remaining oil to your frying pan and fry the eggs in this. When the pizza is cooked cut into quarters and serve each quarter on a plate, topped with a fried egg.
