Ingredients
2.5kg leg of lamb
1 garlic clove, crushed
1 tsp finely-grated lemon zest
1 tsp salt
2 tbsp butter
2 tbsp oil
2 tbsp lemon juice
2 onions, chopped
2 tbsp parsley, chopped
90g mushrooms, sliced
freshly-ground black pepper, to taste
Method:
In a mixing bowl, combine the garlic, lemon zest, salt and 6 generous twists of freshly-ground black pepper. Mix throughly to combine then spread this mixture over the surface of the lamb.
Set the meat, skin side up, in a roasting tin. In the meantime, melt the butter with the oil over low heat. Add the lemon juice and stock then bring the mixture to a boil and pour into the roasting tin.
Transfer to an oven pre-heated to 240°C and roast for 20 minutes. Reduce the heat to 180°C and continue cooking for 20 minutes more.
Transfer the meat to a serving dish then arrange the onion mixture around the outside. Serve hot, accompanied by rice sauté in butter.
