Take your Jambalaya to a new level with this delicious Black Eyed Pea version that will give you good luck all year long!

Ingredients:

6 rashers of bacon, diced
55g onions, chopped
75g green bell pepper, chopped
25g celery, chopped
2 garlic cloves, minced
225g diced cooked ham
225g of andouille sausage, sliced
750ml of chicken stock
750g cooked black-eyed beans (tinned is fine)
400g of uncooked, long grain white rice
60g of chopped, sliced jalapeño chillies
25g spring onions, sliced
1/2 tsp sea salt
1/4 tsp freshly-ground black pepper
1/2 tsp of Cajun seasoning
2 bay leaves

Method:

Fry the bacon in a large pot (a cast iron casserole [Dutch oven] is ideal) until lightly browned. Add the onion, green bell pepper and celery and continue frying for about 5 minutes, until the ingredients are tender.

Add the garlic and fry for 1 minute more then add in the ham and sausage and cook for 3 more minutes.

Add the stock and black-eyed beans and bring everything to a boil.

Once boiling, stir in the rice, jalapeños and spring onions. Season with salt, black pepper, and Cajun seasoning. Add the bay leaf and return to a boil.

Reduce the heat to a simmer, cover, and cook for 30 minutes.

Take off the heat and allow to sit covered for another 10 minutes before serving.

Fluff with a fork then bring to the table.
