Ingredients:
50g margarine, melted
500ml lukewarm water
1kg fine cake flour
300g finely-sliced beef biltong, cut into strips
2 tsp active, dried, yeast
2 tsp salt
Method:
Combine the melted margarine and water in a bowl. In a separate bowl, combine the flour, biltong, yeast and salt. Form a well in the centre of the dry ingredients then add the water and margarine mix and bring all the ingredients together.
Knead until the dough is smooth and elastic then set aside for 10 minutes to rise. Knock the dough back then transfer to a well-greased cast iron cooking pot. Set aside in a warm place to rise until doubled in volume (about 40 minutes).
Place the pot on a barbecue over medium coals. Add a lid and set more coals on top of the lid. Set aside to bake for 60 minutes, or until the bread is done.
Serve sliced, accompanied by barbecued steak and knofyt (eg watermelon preserve).
