Various version of sesame seed wafers are made throughout West Africa, this bene seed and sugar confection originates in Sierra Leone.
Ingredients:
400g (14.1 oz) sesame seeds
2 tbsp sugar
Method:
Wash the sesame seeds then drain in a fine-meshed sieve. Transfer the sesame seeds to a pot and add 250ml (1 cup) water. Bring to a simmer and cook until all the water has evaporated (about 10 minutes).
Once dry continue cooking, stirring constantly, until the sesame seeds are lightly toasted. Turn the sesame seeds into a bowl and set aside. Wash the pan, return to the heat and add 3 tbsp the sugar. Cook until the sugar has melted then add the sesame seeds and stir to combine.
Once everything is nicely combined turn out onto a chopping board and roll out with a rolling pin to about 1cm (2/5 in) thick. Square off with a knife then cut into strips about 4cm (1 1/2 in) wide. Cut at an angle into diamonds then transfer to a serving plate.
