Loin of Veal au Bechamel

Loin of Veal au Bechamel is a traditional British recipe, based on Mrs Beeton's recipe of 1861, for a classic dish of a left-over loin of veal where the meat is stripped off, cooked with bechamel sauce, served on a plate topped with the warmed loin and served topped with more bechamel sauce. The full recipe is presented here and I hope you enjoy this classic British version of: Loin of Veal au Bechamel.

This is a traditional British recipe redacted from the redoubtable Mrs Beeton's 1861 volume Mrs Beeton's Book of Household Management, the classic Victorian cookbook.

Original Recipe

LOIN OF VEAL AU BECHAMEL (Cold Meat Cookery).

887. INGREDIENTS.—Loin of veal, 1/2 teaspoonful of minced lemon-peel, rather more than 1/2 pint of Béchamel or white sauce.

Mode.—A loin of veal which has come from table with very little taken off, answers very well for this dish. Cut off the meat from the inside, mince it, and mix with it some minced lemon-peel; put it into sufficient Béchamel to warm through. In the mean time, wrap the joint in buttered paper, and place it in the oven to warm. When thoroughly hot, dish the mince, place the loin above it, and pour over the remainder of the Béchamel.

Time.—1-1/2 hour to warm the meat in the oven.

Seasonable from March to October.

Modern Redaction

Method:

Strip the meat from the inside of the loin of veal. Mice it and mix with the lemon zest. Place in a pan with enough Béchamel sauce to coat and heat gently until the ingredients are warmed through. Warm the remainder of the Béchamel sauce in another pan.

In the meantime, wrap the remains of the joint in kitchen foil, place in an oven pre-heated to 180°C and allow to warm through.

When the joint is hot, spoon the mince mixture onto a serving dish. Sit the warmed loin on top and pour over the Béchamel sauce. Serve immediately.
