Ingredients:

150g smoked bacon, finely-chopped
160g bacon drippings
140g spring onions, chopped
500g Creole Mustard
180ml tomato paste
240ml orange juice
80ml red wine vinegar
80ml honey
1 teaspoon Creole Seasoning

Method:

Cook the bacon until crisp and set aside. Add the bacon drippings to the pan along with the spring onions and cook over low heat for 5 minutes. Add the tomato paste and cook for a further 3 minutes. Now add all the remaining ingredients and stir thoroughly. Cook for five minutes on low heat.

Remove from the heat, place in an air-tight jar and refrigerate until needed. This makes an excellent dipping sauce for any fried seafood or vegetables. It can also be used as a marinade for any meat before grilling.
