This is a traditional Southern recipe for classic balls of white bread stuffing that are typically used to garnish around the Thanksgiving turkey.
Ingredients:
1 loaf of white bread
300ml (about) turkey or chicken broth (amount will vary depending on how much bread you use)
100g butter, melted
2 eggs, beaten
1 onion, finely chopped
2 celery sticks, finely chopped
1 small bell pepper, finely chopped
2 tsp poultry seasoning
1 tsp dried sage, crumbled
1/2 tsp thyme
1 tsp salt
1/2 tsp freshly-ground black pepper
Method:
The night before, tear the bread into small pieces, arrange in a large bowl, cover with a cloth and set aside to dry.
When ready to cook, pour over just enough of the stock onto the bread to moisten it. The bread should be wetted enough so that, when pressed together, it holds it shape (but do not make too wet). Now drizzle the melted butter over the bread and toss to combine. Add the beaten eggs and stir lightly to combine then add the onion, celery and bell pepper.
Stir so the vegetables are evenly distributed through the bread then sprinkle over the seasonings and stir these in to combine. Now, using your hands, shape the stuffing mix into balls about 5cm in size. Arrange the balls on a baking tray then place in an oven pre-heated to 190°C and bake for about 30 minutes, or until golden brown and cooked through.
