Ingredients:
2 whole chickens, halved
8 garlic cloves, minced
2 tbsp finely-grated ginger
2 tbsp poultry seasoning
1 large jar of pimentos
salt and freshly-ground black pepper to taste
Method:
Season the chicken halves liberally and set aside. Combine all the other ingredients in a food processor and process to chop. Use this mixture to rub liberally over the chicken. Place in a dish, cover and set aside to marinate for 3 hours.
After this time, place on a hot barbecue and cook for about 35 minutes, turning frequently, or until nicely browned all over and cooked through. The juices should run clear when the chicken is pierced in the thickest part of its thigh.
