Ingredients:

500g cocktail sausages
60g Cheddar cheese, grated
880g (two tins) baked beans
1kg potatoes, peeled and diced
60g butter
1 tbsp Dijon mustard
salt and freshly-ground black pepper, to taste

Method:

Place the sausages in a roasting tin and transfer to an oven pre-heated to 190°C. Cook for about 20 minutes, or until nicely browned.

In the meantime, add the potatoes to a pan of boiling, salted, water and cook for about 15 minutes, or until tender. Drain then mash with the butter and the mustard. Mix the cheese into the mashed potatoes and season to taste.

Heat the beans in a pan and all the sausages (but reserve 8). Pour the bean and sausage mix into a baking dish and top with the mashed potatoes. Press the reserved sausages into the top of the mash so they are half buried. Place the dish under the grill and cook until the top of the potatoes are nicely browned.

Serve hot.
