Aussie Grilled Fish Steaks is a modern Australian recipe for a classic barbecued dish of fish steaks, marinated in lime juice, vegetable oil, Dijon mustard, ginger and cayenne pepper that are set on a barbecue to cook. Ingredients:
4 fish steaks (about 250g apiece) [swordfish, tuna, halibut or salmon are good]
60ml lime juice
2 tbsp vegetable oil
1 tsp Dijon mustard
2 tsp fresh ginger, finely grated
1/4 tsp cayenne pepper
freshly-ground black pepper, to taste
Method:
Combine the lime juice, oil, ginger, cayenne pepper and black pepper (I like quite a lot of this and generous quantities are quite Australian) in a bowl. Whisk to mix then add the fish steaks and turn several times to coat in the marinade. Cover he dish and set aside to marinate for about 40 minutes, turning the steaks two or three times during this period.
You can, of course, cook these fish steaks straight on the 'barbie', but for all fish I prefer using a fish basket (a hinged metal basket that encloses the fish inside). If using a fish basked then you should liberally oil the top and bottom pieces before putting the fish inside. Now place the fish on a barbecue over hot coals and cook for about 4 or 5 minutes before turning over and cooking for about 5 minutes on the other side, or until the fish is cooked through and flakes easily with a fork.
