Altdeutsche Brotchen (Old-German Muffins)

Ingredients:

150g (3/4 cup) butter
2 large eggs
1 tsp vanilla extract
1/2 tsp ground cinnamon
315g (2 1/4 cups) unbleached plain flour
1 tbsp finely-grated orange zest
100g (1/2 cup) sugar
1 tbsp rum
3 tbsp milk
2 tsp baking powder
4 tbsp ground almonds
4 tbsp raisins

Method:

Cream together the butter and sugar until pale and fluffy. Add the eggs, one at a time, beating thoroughly to combine after each addition. Next beat in the rum, vanilla and milk.

Sift together the flour, cinnamon and baking powder then add the flour mixture to the butter mixture. Gently mix in the almonds, orange zest and raisins.

Divide the resultant batter between the greased wells of muffin tins, filling them only half full. Transfer to an oven pre-heated to 190C (375F, Gas Mark 5) and bake for about 25 minutes, or until nicely browned and cooked through.

Serve warm.
