This is a classic Mexican-inspired all-purpose spice and herb blend for seasoning tamales.

Ingredients:

8 tbsp Ancho Chilli Powder
4 tbsp Paprika (sweet, not smoked)
2 tbsp Ground Cumin (preferably from toasted seeds)
2 tbsp Garlic Powder
4 tsp Onion Powder
4 tsp Mexican Oregano (crumbled)
2 tsp Fine Sea Salt
1 tsp freshly-ground Black Pepper
4 dried bay leaves, crumbled
2 tsp ground allspice
2 tsp ground cassia bark
4 tsp baking powder

Method:

combine the larger pieces such as the Mexican oregano, bay leaves and cassia in a spice grinder. Pulse to chop finely then turn into a bowl and mix with all the other ingredients.

Note the the spice blend as given above includes baking powder as a rising agent for the tamale dough. If you're going to use the spice blend to flavour other dishes omit the baking powder.

Spoon the spice mixture into an air-tight jar and store in a cool, dark, cupboard.

For an even better flavour, “bloom” the spices by heating them in a little bit of hot oil for about 30 seconds before adding them to your meat and broth.
