Air Fryer Quesadillas is a modern British recipe for a classic Mexican-inspired dish of tortillas with a cheese, tomato and chorizo sausage filling that are folded and cooked in an air fryer. A quesadilla (the Spanish diminutive of quesada) is a Mexican dish made from a tortilla folded in half or two tortillas that are filled with cheese (queso), and sometimes meats, spices, and other fillings, and then cooked on a griddle or stove. Traditionally, corn tortillas are used, but the dish can also be made with flour tortillas. Quesadillas are frequently sold at Mexican restaurants all over the world.
This is a modern version intended to be cooked in an air fryer.
Ingredients:
250g cheddar grated
2 medium tomatoes, finely chopped
150g chorizo, finely chopped
½ small bunch of parsley, finely chopped
1 red chilli, finely chopped (deseeded if you prefer less heat)
6-8 spring onions, finely sliced
1 lime, juiced
8 large flour tortillas
lime wedges, to serve
Method:
Pre-heat your air fryer to 180C.
Combine all the ingredients except the tortillas and lime in a bowl.
Spoon the resultant filling mixture onto one half of each tortilla, then fold over the other half and press down firmly. You want the filling to be near the edge but not falling out.
Put as many tortillas as you can into your air fryer in a single layer — it’s fine if they overlap a little.
Put a spoon or heatproof utensil on top to stop the tortillas coming apart during cooking. Cook for about 10 minutes, turning each quesadilla over after 5 mins until golden and crisp at the edges.
