The brisket is the breast forequarter of beef and is the meat that sits on top of the sternum. In cattle it takes almost 60% of the weight of the animal, so is an active strong muscle. This means it’s not as tender as other cuts but is very flavoursome. This also makes it an economical cut. It is available in both its native state (flat) and rolled into a joint. A brisket can be roasted and roast brisket makes for excellent day after meat (cook gently in leftover gravy or make beef sandwiches).
As an economical cut that is quite but not overly lean, this lends it well to cooking in an air fryer (where you don’t really want to use the best cuts).
Ingredients:
1.2kg (2 2/3 lbs) Beef Brisket
1 tbsp Extra Virgin Olive Oil
2 tsp Basil
2 tsp Parsley
2 tsp Rosemary
2 tsp Thyme
Salt and freshly-ground black Pepper
Method:
Place your beef brisket on a tray (this is the easiest way to coat your brisket in the seasoning and grab any bits of seasoning that have fallen off) then smoother all over with extra virgin olive oil, followed by the seasonings. This ensures that he dried herbs and the seasonings will stick to the oil and stay on the beef as it cooks.
If any of the coating comes off, then use the tray to roll the beef and grab any stray bits of seasoning.
Transfer the beef into your air-fryer basket and cook for 30 minutes at 180C (360F). At this point carefully turn the beef over and cook for a final 15 minutes at the same temperature. It will now be cooked to medium.
Transfer to a chopping board, cover loosely with foil and allow to rest for 5-10 minutes before removing the string.
