Ahi Poke

Ahi Poke is a traditional American recipe (originating from Hawaii) for a classic dish of fresh ahi tuna marinated with brown or red seaweeds, red onions and spring onions in a mix of sesame oil and soy sauce that's chilled over night and served on a bed of greens. Ingredients:

240g fresh ahi tuna fillet, cut into 2cm cubes
100g red onions, chopped
100g ogo (raw red or brown seaweed, such as Alaria esculenta (Dabberlocks), dulse and Sugar Kelp or equivalent local seaweed), finely shredded
2 spring onions, sliced
1 tsp sesame oil
2 tsp soy sauce
3/4 tsp coarse sea salt
mixed greens, to serve
toasted sesame seeds, to garnish

Method:



Combine all the ingredients in a bowl and toss to mix set aside to cure in the refrigerator over night.

The following day arrange the tuna mixture on a bed of fresh greens, garnish with toasted sesame seeds and serve.
