Nothing says summer like some backyard barbecuing and a big pitcher of home-made agua de sandía. I first got into watermelon-based drinks in South Africa and have wanted to try this Mexican version for some time now.
Ingredients:
½ medium-sized watermelon, peeled and flesh cubed
1/5l water
50g sugar (or to taste)
sprigs of fresh mint or basil, to garnish
Method:
Working in batches, blend together the watermelon, sugar and water in a blender set to medium speed for about 30 seconds per batch.
Mix the various batches together in a jug or pitcher then chill in the refrigerator over night.
Serve in glasses over plenty of ice garnished with a sprig of mint or basil.
Drink this agua fresca within 2 days of preparing for optimal flavour and freshness.
