Though often presented as a single spice mixture (see the recipe for advieh, Persian advieh is actually a family of related spice blends, each intended for a specific culinary purpose.
This recipe is for Advieh Torshi the spice blend typically used for pickles and pickling.
Ingredients:
3 tbsp ground coriander
2 tbsp ground cumin
2 tbsp angelica seeds (golpar in Persian)
2 tbsp ground ginger
1 tbsp caraway seeds (shah Jeera)
1 tsp ground cinnamon
1 tsp anise seeds
1 tsp nigella seeds
½ tsp celery seeds
½ tsp ground turmeric
½ tsp green cardamom or nutmeg
½ tsp freshly-ground black pepper
½ tsp chilli flakes
½ tsp dried tarragon
½ tsp dried savoury
½ tsp dried coriander leaves
Method:
As this is a pickling spice, there’s no need to grind the ingredients. Simply stir together in a bowl then spoon into a jar.
Secure an air-tight lid and store in a cool, dark, cupboard.
