Tagliatelle is a form of Italian pasta shaped in long thin ribbons. It is generally sold either as curled nests or as bundles of straight rods, live very broad spaghetti. Tagliatelle can either be plain or green (flavoured with spinach) and is available both dried and fresh. It is ideal for thick, creamy sauces and is the pasta of choice for a carbonara.
