Bucatini con Rana Pescatrice (Bucatini with Monkfish) is a traditional Italian recipe for a classic dish of monkfish in a fresh tomato sauce served with tagliatelle that makes an excellent Valentine's day meal for two. Ingredients:

120g monkfish fillet, halved lengthways then cubed
90g fresh tagliatelle
30g yellow onion, finely chopped
1 garlic clove, minced
1 anchovy, finely chopped
90g fresh tomatoes, blanched, peeled and chopped
60ml olive oil
plain flour, for dusting
1 tsp dried chillies, crushed
100ml white wine
1 tbsp fresh mint, finely chopped
1 tbsp fresh parsley, finely chopped
100ml fish stock

Method:

Heat the olive oil in a pan until almost smoking. Dust the monkfish cubes with lightly-seasoned flour then add to the olive oil.

Fry for about 60 seconds per side to brown then add the garlic and onion. Cook for 1 minute more then add the anchovy. Continue cooking for about 4 minutes more or until the onions begin to brown then add the white wine. Stir to mix and deglaze the pan then add the fish stock.

Bring the mixture to a boil then add the tomatoes, mint, parsley and chillies. Adjust the seasoning to taste, reduce to a simmer and cook for 5 minutes.

Whilst the sauce is simmering, add the pasta to a pan of lightly-salted boiling water and cook according to the packet instructions (usually only a couple of minutes).

Drain the pasta, add to the pan with the sauce and toss to combine. Serve immediately.
