This is a continuation of an entire series of pages that will, I hope, allow my visitors to better navigate this site. As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the Mousse recipes added to this site.

These recipes, all contain Mousse as a major wild food ingredient.

A mousse is a a light fluffy mixture, either sweet or savoury which can be served either hot or cold. Sweet mousses are often flavoured with chocolate or fruit purée and many contain whipped cream. Savoury mousses usually contain puréed or blended fish or meats such as salmon, shellfish, chicken or ham. Sweet mousses tend to be made with beaten egg whites while savoury mousses use gelatine.

Some mousses will simply set in the fridge, but others need to be baked in an oven, usually in a Bain-marie.
