This is a recipe for a traditional lemon mousse. It's easy to make and guaranteed to wow your friends.

Ingredients:

3 eggs, separated
grated zest and juice of two lemons
200g caster sugar
1 sachet gelatine
500ml double (or whipping) cream
3 drops vanilla essence

Method:

First add he egg yolks and sugar to a bowl. Whisk together until the mixture becomes pale and fluffy. Whisk the lemon juice into this and then add the zest and whisk that in too.

Meanwhile dissolve the gelatine in 2 tbsp boiling water. Allow this to cool slowly mix this into the egg yolk and lemon mixture, along with a few drops of vanilla essence.

Whisk the egg whites in a bowl until quite stiff then whisk the cream in a separate bowl. Fold the cream slowly into the lemon mixture and then add the egg whites and fold those in as well.

Pour the mixture into a dish and chill in the refrigerator for several hours.
