This is a continuation of an entire series of pages that will, I hope, allow my visitors to better navigate this site. These recipes, all contain Lyonnaise (a la) as a major wild food ingredient.

This means to cook something in the style of Lyon. These dishes are usually sautéed and are characterized by the use of chopped onions cooked in butter until golden and often finished off with vinegar and sprinkled with chopped parsley (which is used as a garnish). The term also describes the classic French Lyonnaise sauce which is made with onions, white wine and a brown stock, then strained and served with meat or poultry.
