30g butter
2 small turnips, peeled and cubed
675g stewing steak, cubed
240g streaky bacon rashers, quartered
1 tbsp flour
4 tsp mixed herbs
150ml cider
1l water
225g potatoes, peeled
2 onions, chopped
3 leeks, sliced

Method:

Melt the butter in a large saucepan and use to fry the beef and bacon until coloured before adding the flour and mixing thoroughly. Fry for 1 minute then add the water to a pan and mix to form a sauce. Bring the mixture to a boil before turning the heat down to a simmer. Add the lid and cook for 40 minutes more. Now add the onions, carrots, turnips and the herbs. Season to taste before returning to a boil then add the cider, affix the lid and allow to simmer for an hour before adding the potatoes and leeks.

Cook for a further half hour (lidded) then serve immediately, garnished with some of the parsley.
