Raphanos cum Piperato (from Apicius' De Re Coquinaria) III, xiv


Raphanos cum piperato, ita ut piper cum liquamine teras.

Translation


Radishes with Pepper Sauce, grind [over] pepper and [mix with] liquamen.

Modern Redaction

Ingredients:

400g radishes, washed and halved
60ml fish sauce (liquamen)
freshly-ground black pepper, to garnish

Method:

Lightly-steam the radishes until crisp-tender then drain and turn into a serving bowl.

Pour the fish sauce over the radishes and toss to combine. Season with black pepper and serve.
