Original Recipe
Piper, puleium, mel vel passum, liquamen, acetum. interdum et silfi accedit.
Translation
Pepper, pennyroyal, honey or condensed must, liquamen and vinegar; once in a while one adds silphium.
Ingredients:
½ Honey Melon, peeled, diced and de-seeded
½ Water Melon, peeled, diced and de-seeded
500ml
passum
1 tsp honey
½ tsp freshly-ground pepper
1 tsp
liquamen
Pinch of dried
pennyroyal and
asafoetida if desired.
Splash of white wine vinegar.
Method:
Add the diced melons to a pan, tip in the spices, honey and a dash of vinegar. Cook until the melons soften. Allow to cool a little then serve.
