Aliter ofellae (Starters, Another Way) is a traditional Ancient Roman recipe for a classic dish of pork pieces that are boiled in wine sauce and served sprinkled with black pepper. Translation
Starters, Another Way: [Cook the pieces of meat] in a frying pan with plenty of wine sauce. Sprinkle with pepper and serve.
Modern Redaction
Ingredients:
500g good quality cut of pork (eg fillet, loin), cut into 5cm cubes
For the Wine Sauce:
150ml white wine
120ml pork stock
2 tbsp liquamen (fish sauce)
1 tbsp olive oil
freshly-ground black pepper, to garnish
Method:
Place the meat in a pan. Whisk together the white wine, pork stock, liquamen and olive oil. Pour over the meat and bring to a simmer. Cover the pan and cook gently for about 40 minutes, or until the meat is tender.
Remove the meat and arrange on a serving dish. Garnish with plenty of black pepper, and serve.
