Translation
Wild Boar, Another Way: Boil in sea water with a sprig of laurel until it is tender. Take off the skin. Serve with salt, mustard and vinegar
Modern Redaction
Ingredients:
4kg haunch or leg of wild boar or pork
4l water
100g sea salt
6 bayleaves
For the Sauce:
4 tbsp prepared mustard
4 tbsp white wine vinegar
sea salt, to taste
Method:
Place the meat in a large pot and pour over the water. Add the salt and bayleaves then bring to a boil. Cover the pot and cook for about 2 hours, or until the meat is tender.
Remove the meat from the pot and strip off the skin. Arrange on a serving dish. In a bowl, beat together the mustard, vinegar and salt. Pour this sauce over the meat and serve.
