Zom (Bitter Greens with Meat)

Zom is a traditional
Cameroonian dish of greens with meat. Traditionally bitterleaf is used, but you can substitute just about any kind of bitter greens, such as Cassava greens, Sweet Potato greens, collard greens etc can be used.
Ingredients:
900g stewing beef, cubed
4 tbsp oil
1 large onion, chopped
900g bitter greens, (washed and chopped) [for my version I use wild ground elder]
2 tomatoes, finely chopped
2 tbsp tomato puree
2 tbsp peanut butter
salt and black pepper, to taste
Method:
Place the beef in a pan with a little salt and just enough water to cover. Bring to a boil, cover and simmer for about 100 minutes, or until the meat is just tender. Remove the meat, set aside and reserve the liquid.
Heat the oil in a large pan and use to fry the onion until soft. Add the meat and cook for 2 minutes. Take 500ml of the reserved broth (top-up with water if needed) and ad to the pan along with the onion and meat. Add the spinach, tomatoes, tomato puree and peanut butter and bring the mixture to a boil, reduce the heat and allow to simmer for 30 minutes. Season to taste, then serve the stew on a bed of rice.
