Ingredients:
75g lard or oil
1/2 large yellow onion, sliced into small pieces
50g to 70g plain flour
1 tbsp paprika
Method:
Melt the lard in a pan over medium heat and use to fry the onion until soft and translucent (about 6 minutes). Add the flour a little at a time, stirring well after each addition, until the mixture is thick. Continue cooking, stirring all the while, until the flour is a dark nutty brown.
Stir-in he paprika then use as a base for thickening soups, stews or sauces. Traditionally this is used as a thickening base for cuspajz.
