Cuspajz (Croatian Cabbage and Potato Soup) is a traditional Croatian recipe for a classic vegetarian soup of cabbage, potatoes and green bell pepper in a stock thickened and flavoured with zafrig. Ingredients:
1 head green cabbage, sliced into large cubes
1 green bell pepper, halved and de-seeded
300g potatoes, diced
salt and freshly-ground black pepper, to taste
1 batch Zafrig
Method:
Place the cabbage cubes in the base of a large stock or soup pan and add just enough water to barely cover. Arrange the halved green bell pepper on top then season to taste. Bring to a boil, reduce to a simmer and cook for about 20 minutes, or until the cabbage is tender. Stir-in the potatoes and cook for a further 25 minutes, or until the potatoes are just tender.
Pour the soup over the prepared Zafrig and stir to combine. Bring to a simmer then cook for 10 minutes, or until heated through and thickened. Serve ladled into four warmed soup bowls.
