Yam and Beans is a traditional Nigerian recipe for a classic vegetarian accompaniment of black-eyed peas and yam in a red palm oil base with curry powder, chilli and onions. The full recipe is presented here and I hope you enjoy this classic Nigerian version of: Yam and Beans.

Ingredients:
200g dried black-eyed peas
1.2l water
2 Maggi cubes (or stock cubes)
1 tsp salt
1 medium onion, chopped
60ml red palm oil
1 tsp chilli flakes
2 tsp curry powder
300g chopped yam
Method:
Wash and pick over the beans then place in a large bowl, cover with water and set aside to soak over night.
The following day, drain the beans then place in a large pot and add the 1.2l water and the onion. Bring to a boil, then cook over medium heat for about 120 minutes, or until the beans are tender.
At this point stir in the Maggi cubes, salt, red palm oil, chilli flakes, curry powder and yam. Return to a simmer and cook for a further 60 minutes, or until the ingredients are tender and the stew has thickened.
