Vegetarian Brochettes: Classic British recipe for a barbecue dish of courgette, bell pepper, tofu, tomato, onion and mushroom skewers with a honey and mustard glaze.
For the Honey Glaze
2 tbsp olive oil
1 tbsp Meaux mustard
1 tbsp clear honey
salt and freshly-ground black pepper, to taste
Method:
Using a vegetable peeler, peel off strips along the length of the courgettes so that you have alternating green and white strips.
Cut each courgette into 8 thick slices. Now cut each bell pepper quarter in half. Cut the drained tofu into 3cm cubes.
Thread alternating pieces of bell pepper, courgette slices, tofu, cherry tomatoes, baby onions and button mushrooms onto 4 metal skewers.
For the glaze, mix together the olive oil, mustard and honey together in a jug and season to taste with salt and black pepper.
Brush the brochettes with the honey mustard glaze, then place on a barbecue grill over medium-hot coals. Cook, turning often and brushing frequently with the glaze for about 8 minutes, or until cooked through.
