This is a classic Russian Jewish version of the traditional Russian/Ukrainian
vareniki that uses matzoh bread meal instead of the usual plain flour as the binding and coating ingredient.
Ingredients:
350g potatoes, mashed with chicken fat
3 eggs, well beaten
60ml matzoh cake meal (finely-ground
matzoh bread)
salt and freshly-ground white pepper, to taste
150g any left-over meat, finely minced [ground] (chicken or beef are typical but fish and lamb also work)
matzoh meal, to coat
Method:
For the best taste mash your potatoes with chicken fat, but butter can be used at a pinch. Mash the potatoes until creamy then combine in a bowl with the eggs and matzoh cake meal. Season to taste then bring the mixture together with your hands. Turn onto a lightly-floured work surface then divide into ten equal portions and shape these into patties.
Place a spoonful of the meat filling in each circle then roll the patty over the meat until it's completely covered. Flatten the vareninkas slightly then dip in the egg mix until well covered all over then coat completely in the matzoh meal. Shake the excess matzoh meal away then shallow fry in butter until booked through and golden all over (about 8 minutes per side).
